This is a really simple & fun recipe for kids. It doesn’t have a lot of ingredients and comes together quickly. I always make sure that I cut the veggies really tiny. Kids can be picky!
In a large pot over medium heat, saute carrots, onion, and garlic until onion is really soft & translucent. Add in salt to help the veggies sweat & soften. Be careful not to brown/burn the onion or garlic. About 8 minutes. Add in tomato paste and cook for 1 minute. Add in dried seasonings. Stir to combine. Add broth and salt & pepper to taste. Bring to a boil. Cover and turn down to a simmer for 15 minutes. Add alphabet noodles and cook for 7-8 minutes or until noodles are cooked al dente. The noodles will absorb a lot of the broth and thicken the longer you leave them. My kids like this soup on the thicker side. Pour into bowls and garnish with parm cheese, if using.
